12 Days of Christmas-3rd Day: Jewelled Cranberry Sauce Recipe

Screen shot 2013-12-18 at 12.07.45 AMWhen gathered around the Christmas table, the craberry sauce may not always be the center of attention but a truly tasty cranberry sauce makes all the difference.

My jewelled cranberry sauce is not only easy to make, it’s simply delicious.

Jewelled Cranberry Sauce Recipe

  • 500g fresh cranberries
  • 250g sugar
  • 3 strips of orange rind
  • 60ml cherry brandy
  • 100ml water
  • 1 clove
  • pinch of mace
  • 1 fresh bay leaf
  • 2 star anise
  • 4 bruised juniper berries

Directions

Put everything in a pan and bring to a simmer. The berries will start to pop. When this happens start to start stirring ferociously with a wooden spoon to break them down and release all the delicious juices. It will appear quite runny but the pectin in these little berries is enormous and it will set fabulously.
