12 Days of Christmas Tips-6th Day: Nana’s Bread Sauce Recipe

Throughout the holiday season, you might be tempted to discard leftovers such as bread after you think it has gone bad. However, there is actually a great recipe involving your leftover bread.

Don’t throw away stale bread in the lead up to Christmas day, this will be ideal for the Bread Sauce.

Nana’s Bread Sauce is a perfect appetizer to serve during the family Christmas party!

IFNana’s Bread Sauce Recipe


  • 1kg left over white bread, slightly stale, don’t worry about cutting off the crusts, make into bread crumbs in the food processor
  • 1 litre of milk
  • 50ml cream
  • 2 medium onions, cut into quarters and  spiked with at least 5 cloves
  • 3 fresh bay leaves
  • Freshly ground sea salt and white pepper
  • 3 blades of mace
  • 3 all spice berries, crushed
  • 50g butter
  • Pinch of freshly ground nutmeg


In a large saucepan, heat the milk, cream, onions and spices. When it comes to a simmer take off the heat and leave to infuse for 1hr. Just before serving, reheat the mixture and pour in the breadcrumbs and butter. Blend in the food processor, remove the cloves if you prefer, I love the strength of the cloves, but not everyone does. Serve in a pretty bowl piping hot.
